The only real exposure (I felt) to Chinese cuisine I had was Sichuan Gourmet in Manhattan, New York. They offerred many classic Sichuan dishes, such as dan dan noodles, mapo doufu, and other spicy dishes. The food was quite good and affordable, so I had high expectations for the food in China.
